Yes, making the galette des rois the day before allows you to extend the resting time and to have a well-sealed galette. Befor placing it in the oven the next day, don't forget to brush the top with egg yolk.


Can I make my own puff pastry?

Yes, the galette will be even tastier. You can also buy handmade puff pastry from your baker.


How to preserve a Gâteau des Rois?

To keep the soft and pillowy texture, the brioche should be wrapped in cling film while still warm. Once opened, keep it wrapped in cling film and place it in an airtight box away from sunlight – ideally a bread box.


How do I obtain pearl sugars in the recipe?

If you have a hard time getting hold of pearl sugar, which is available on all pastry aisles in French supermarkets, you can put sugar cubes in a ziplock bag and crush them with the back of a knife or a hammer as a substitute. They should be the size of peas.


What ingredients go well with frangipane galette?
